Homeschool cooking: Gluten free lunch

Nachos are a wonderful gluten-free meal that most kiddos enjoy. If your child is allergic to wheat, it’s best to buy plain, non-flavored tortilla chips. Always check the label.

Our nachos included extra lean ground beef, low-fat, shredded cheese, and and diced olives.

Fresh veggie choices included:

  • Chopped lettuce
  • Diced tomatoes
  • Chopped avocados
  • Chopped green onion

To monitor portion sizes, I put chips on each plate and allowed each girl to choose her own toppings, which I scooped onto each plate.

Afterwards, the girls were full, we managed to get them to eat some fresh veggies, and they thoroughly enjoyed their meals.
